Holy Guacamole!

With football bowl and championship games to start the new year, plus trying to stick to those healthy resolutions, finding a tailgate snack that is nutritious can be a challenge. One people pleasing snack with a plethora of vitamins and minerals – guacamole.

The primary ingredient in guac – the avocado – has 20 different vitamins and minerals including Vitamin K, Folate, Potassium and Vitamin C. Mix in tomato, garlic and cilantro for added fiber and antioxidants, and you’ve got a snack jam packed with nutritional value.

Here is a quick, healthy recipe:

 Healthy Guacamole
 3 medium avocados, pitted and halved
 1 lime, juiced
 1/3 cup minced red onion
 1 small clove garlic, mashed
 1 tbsp. chopped cilantro
 Salt and Pepper to taste

Place the pulp from avocados in mixing bowl and gently smash  with fork to desired consistency. Add lime juice, salt, pepper, cilantro, onion, garlic and mix thoroughly. Serve with tortilla chips or cut vegetables like bell pepper and celery.
